Beef Stew

Ingredients:
- 1 pound of Chuck Beef, in 3/4 inch cubes
- 1/4 cup flour
- salt, pepper
- 2 tbs butter
- medium onion, course chopped
- 3-4 stalks of celery, sliced
- 1 cup chopped brown mushrooms
- 12 ounces of Porter beer
- 1 1/2 cups water
- 3 medium carrots in 3/4 inch chucks
- 3 medum potatoes in 3/4 inch cubes
- 1 tsp basil, 1 tbs parsley
- 1 tbs corn starch
Directions:
- mix flour, salt and pepper
- coat beef with the flour
- in a hot 10 inch iron skillet, brown beef in butter (5-8 minutes)
- add the onions and celery and mushroom, (5 minutes)
- add beer. Simmer covered for 3 hours, stir about every 15 minutes

add carrots and water, cook about 15 minutes more
add potatoes, cook about 15 minutes more
add basil & parsley, cook about 15 minutes more
mix the corn starch with a little water, add stirring, a couple of
minutes.
DONE. Serve with sourdough bread and beer.
