Ingredients:
- 8 oz Egg Noodles
- 16 oz Chicken Breast, 1/2" cubes
- 8 oz Brown Mushroom Caps, sliced
- 3 oz Scallion, sliced
- 3 oz Butter, divided to 2 pans
- 1/4 tsp Salt, 1/4 tsp Pepper, 1 tsp Paprika
- 12 oz Sour Cream
- 1 tsp Dijon Mustard
- 1 tbs Parsley
- Splash of Red Wine

Directions:
- Boil the noodles
- Saute the mushrooms, bewhile:
- Saute chicken, seasons, 4 minutes
- Add onion, 3 minutes
- Add mushrooms, 1 minute
- Add sour cream, mustard, parsley
- Add a little wine to thin the sauce, cover, 5 minutes
- Serve over egg noodles
