Chicken Stroganoff




Ingredients:
  • 8 oz Egg Noodles
  • 16 oz Chicken Breast, 1/2" cubes
  • 8 oz Brown Mushroom Caps, sliced
  • 3 oz Scallion, sliced
  • 3 oz Butter, divided to 2 pans
  • 1/4 tsp Salt, 1/4 tsp Pepper, 1 tsp Paprika
  • 12 oz Sour Cream
  • 1 tsp Dijon Mustard
  • 1 tbs Parsley
  • Splash of Red Wine
Directions:
  • Boil the noodles
  • Saute the mushrooms, bewhile:
  • Saute chicken, seasons, 4 minutes
  • Add onion, 3 minutes
  • Add mushrooms, 1 minute
  • Add sour cream, mustard, parsley
  • Add a little wine to thin the sauce, cover, 5 minutes
  • Serve over egg noodles
