Cream Mushroom Soup



Ingredients:
  • 3 tbls butter
  • 1 medium onion, fine chop
  • 16 oz mushroom, thin sliced
  • 1/2 tsp black pepper
  • 1 tbls parsley
  • 3 cups vegetable broth
  • 1 cup sour cream
  • 2 tbls AP flour
  • tsp white wine vinegar
Directions:
  • melt butter in skillet
  • saute onion in butter until translucent
  • add mushroom, cook to limp
  • transfer to pot, add broth
  • heat to boil, reduce to simmper for 20 minutes
  • stir sour and chream and flour, a little water to sauce
  • stir into pot, gently
  • add vinegar, serve
