Double Baked Potato






Ingredients:
  • 14 oz russet potato, cubed
  • 1/4 cup sour cream
  • 2 oz cream cheese
  • 1/2 tsp salt, 1/4 tsp white pepper
  • 1/2 tsp garlic powder (1 clove fresh minced)

  • 1 tbls butter
  • 1/2 tsp half sweet paprika

  • chopped green onion (optional)
Directions:
  • cook potato, drain
  • add sour cream, cream cheese, salt, pepper,
  • and garlic -- mash (milk to thin if needed)
  • trasfer into a baking dish
  • cover with plastic wrap, in refrigerator for 8 to 24 hours

  • preheat oven to 350F
  • unwrap, melted butter on top, sprinkle paprika on top
  • dish into oven for 30 minutes
  • Done, serve
