Garlic Chicken Fried Rice







Ingredients:
  • 3/4 cup jasmine rice, rinsed
  • 1 1/2 cup water
  • 2 tbls butter

  • 2 tbls olive oil
  • 14 oz chicken breast, chopped
  • 3 cloves garlic, minced
  • 3 eggs, beaten
  • 1/2 tsp salt, 1/2 tsp pepper
  • 12 oz mixed vegetables, hot
  • 3 tbls soy sauce
  • 1 1/2 tbls sesame oil
  • green onion, sliced
Directions:
  • cook rice, refrigerate overnight

  • microwave the vegetables, 8 minutes
  • meanwhile, oil in hot skillet
  • add chicken and garlic, cook 4 minutes
  • move chicken to side of skillet
  • scramble the eggs with salt and pepper
  • add vegetables
  • add cold rice, soy sauce, sesame oil
  • mix, heat until rice is hot
  • Serve, garish with green onion. Enjoy
