Meatloaf w/ Beef & Pork







Ingredients:
  • 15 oz ground beef
  • 7.5 oz sweeet Italian sausage
  • 1 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrot, finely chopped
  • 3 cloves garlic (~ 1 tbls)
  • 2 oz butter
  • 1/2 tsp salt, 1/2 tsp pepper
  • 1 tbls Worcestershire Sauce
  • 1/3 cup ketchup
  • 2 eggs
  • 1 cup bread crumbs (french?)
  • 1 tbls parsley
Directions:
  • Preheat oven to 350 F
  • Butter small skillet, hot
  • add onion/celery/carrot/garlic, cook 5 minutes
  • reduce heat to med-low, cover, cook 5 minutes more
  • stir in salt/pepper/Worcestershire/ketchup, one minute, let cool
  • in big bowl, add crumbs/beef/sausage/eggs/parsley/vegetables
  • well mix, put in a loaf pan
  • cover with a 1/4 cup of ketchup, into oven for 75 minutes
  • Serve with mash potatoes. Enjoy
