Pecan Chicken



Ingredients:
  • 15 oz chicken breast
  • 3 tbls flour, 1/2 tsp salt, 1/2 tsp pepper
  • 2 oz olive oil

  • 1/2 cup pecans, chopped
  • 2 oz butter

  • 1 1/3 cups cream
  • 2 tbls orange marmalade
  • 1 tbls dijon mustard
  • 1/2 tsp each basil, oregano
  • 1/2 tsp each garlic powder, onion powder
Directions:
  • in 10" skillet:
  • flour salt pepper on breast
  • breast in hot oil, 3 minutes each side
  • remove to plate

  • pecans in butter, 4 minutes

  • in the above 10" skillet
  • add cream, marmalade, mustart, spices
  • add pecans, cook 4 minutes
  • add chicken, cook until the sauce is thickened

  • serve with Fried Rice
