Pepper Beef

 

 

Ingredients:

  • 1 pound beef round
  • 1/4 cup soy sauce
  • 1 clove garlic, minced
  • 2-4 tbs grated fresh ginger
  • 1/3 cup olive oil
  • 1 cup green onion, thinly sliced
  • 1 cup red bell peppers, cut into 2" x 1/6" strips
  • 2 stalks celery, thinly sliced
  • 1 tbsp cornstarch
  • 4 small roma tomatoes, each in eight wedges
  • 1 cup Jasmine rice

Directions:

  • Combine soy sauce, garlic, and ginger in a bowl.
  • Slice the beef into 2x1/2x1/8 inch strips, toss in the bowl.  Let is rest for 30 minutes (or more) while slicing the vegetables
  • Heat in a large frying pan, add beef about 4 minutes to brown, cover and reduce to simmer for 30 minutes.
  • Start the rice.
  • Turn on the heat, add the onion, pepper, and celery.  Stir occasionally, about 10 minutes.
  • Stir cornstarch in 1 cup of water, add into the pan until thickened
  • Add tomatoes and heat through, about 2 minutes.
  • Done.  Serve.
