Ingredients:

1 pound beef round

1/4 cup soy sauce

1 clove garlic, minced

2-4 tbs grated fresh ginger

1/3 cup olive oil

1 cup green onion, thinly sliced

1 cup red bell peppers, cut into 2" x 1/6" strips

2 stalks celery, thinly sliced

1 tbsp cornstarch
-
4 small roma tomatoes, each in eight wedges

1 cup Jasmine rice

Directions:

Combine soy sauce, garlic, and ginger in a bowl.

Slice the beef into 2x1/2x1/8 inch strips, toss in the bowl. Let is rest for 30 minutes (or more) while slicing the vegetables

Heat in a large frying pan, add beef about 4 minutes to brown, cover and reduce to simmer for 30 minutes.

Start the rice.

Turn on the heat, add the onion, pepper, and celery. Stir occasionally, about 10 minutes.

Stir cornstarch in 1 cup of water, add into the pan until thickened

Add tomatoes and heat through, about 2 minutes.

Done. Serve.
