Ingredients:
- 12 oz round beef, thin sliced
- 1/3 cup soy sauce
- 3 tbs grated fresh ginger
- 1 clove garlic, minced
- 1 cup celery, sliced
- 2 cup bell peppers, cut into 2" x 1/6" strip
- 1 cup green onion, sliced
- 2 tbsp corn starch w/ 1 cup water
- 5 small roma tomato, seeded, 8 wedges
- 7/8 cup dry Jasmine rice
- 1 3/4 cups water
- 3 tbsp olive oil

Directions:
- mix soy sauce, garlic, ginger in bowl
- toss beef in bowl, rest for 2 to 4 hours
- olive oil in hot skillet
- bowl of beef in skillet, cook 5 minutes to brown
- reduce to low, simmper 30 minute while starting rice
- when rice starts boiling, reduce to dead low, cover for 15 minutes
- meanwhile, skillet back to hot, toss in vegetables for 10 minutes
- Stir cornstarch in 1 cup of water, add into the pan until thickened, 3 minutes
- Add tomatoes and heat through, 2 minutes
- rice on plates, add beef on top
