Preheat oven to 400 degrees. Arrange peppers on an
lightly oiled baking sheet
In a medium-high skillet, 2 tbsp oil, cook sausage to break up
and brown, about 5 minutes. Transfer sausage into a bowl
In the same skillet, add garlic, onion, zucchini, and a dash
of pepper. Cook until tender, about 8 minutes.
Add to vegetables and cheese and rice to the bowl with
the sausage, mix.
Stuff the mix into the peppers. Moist the breadcrumbs
with oil, top the the peppers with the breadcrumbs.
Bake about 30-40 minutes. Serve
