Ingredients:
- 2 pounds pork shoulder
- 2 pounds sauerkraut
- large onion, course chopped
- large apple, course chopped
- 1/2 cup brown sugar
- 1 tbls caraway seeds
- splash of wine

Directions:
- Heat oven to 325 degrees
- Hot skillet, saute pork, 3 minute / side
- mix everything else in a bowl
- Pork in the Iron Dutch Oven
- dump over everything on top
- in the oven for 4 hours.
