Beef Stew





Ingredients:
  • 3 tbls butter
  • 14 oz chuck beef, 3/4" cubes
  • 1/4 cup whole wheat flour
  • 1 tsp black pepper, 1/2 tsp salt

  • 1 medium onion, course chopped
  • 3-4 stalks celery,course sliced
  • 1 cup mushroom, chopped

  • 12 oz bottle Porter Beer

  • 1 1/2 cups water
  • 3 medium carrots
  • 3 small potatoes
  • 1 tsp basil, 1 tbls parsley
  • 2 tbls corn starch (with a little water)
Directions:
  • butter in hot skillet
  • mix flour/salt/pepper, toss in the beef
  • beef in the skillet, brown for 5 to 8 minutes
  • add onion/celery/mushroom, cook for 5 minutes
  • add beer, cook to boil, reduce to dead low for 3 hours
  • (stir the bottom every 15 minutes)

  • increase heat, add water and carrots, down to simmer to cook 15 minutes
  • add potatoes, cook for 15 minutes
  • add basil/parsley, cook for 15 minutes

  • add corn starch, stir to thicken, 4 minutes

  • stew in bowls
  • serve wirh sourdough bread
  • DONE
