Ingredients:
- 3 tbls butter
- 14 oz chuck beef, 3/4" cubes
- 1/4 cup whole wheat flour
- 1 tsp black pepper, 1/2 tsp salt
- 1 medium onion, course chopped
- 3-4 stalks celery,course sliced
- 1 cup mushroom, chopped
- 12 oz bottle Porter Beer
- 1 1/2 cups water
- 3 medium carrots
- 3 small potatoes
- 1 tsp basil, 1 tbls parsley
- 2 tbls corn starch (with a little water)

Directions:
- butter in hot skillet
- mix flour/salt/pepper, toss in the beef
- beef in the skillet, brown for 5 to 8 minutes
- add onion/celery/mushroom, cook for 5 minutes
- add beer, cook to boil, reduce to dead low for 3 hours
- (stir the bottom every 15 minutes)
- increase heat, add water and carrots, down to simmer to cook 15 minutes
- add potatoes, cook for 15 minutes
- add basil/parsley, cook for 15 minutes
- add corn starch, stir to thicken, 4 minutes
- stew in bowls
- serve wirh sourdough bread
