Chicken Cacciatore



Ingredients:
  • 9 chicken drumsticks (about 3 pounds)
  • 3 tbsp olive oil
  • 2 clove garlic, sliced
  • 14 oz onion, thin sliced
  • 28 oz can peeled roma tomatoes (Mutti)
  • 1/2 cup white wine
  • 1/4 tsp salt, 1/2 tsp black pepper
  • 1 tsp basil, 1 tbsp parsley

  • 2 oz butter
  • 1 clove garlic, minced
  • 1 tsp parsley
  • 14 oz French Bread, 9 1" slices
Directions:
  • 14" skillet, olive oil, hot, garlic, 1 minute
  • add onion until translucent, about 5 minutes
  • move onions to side of the skillet
  • add chicken slightly brown, both sides, about 5 minutes
  • add tomato, wine, and seasonings
  • reduce to low, simmer for 40 minutes

  • barely melt butter, add garlic and parsley
  • slice bread, top with butter, toast
  • Serve
