Ingredients:
- 2 lbs Corned Beef
- corned beef spices
- 1 onion, quartered
- 3 carrots, large chunks
- 3 stalks celery, 1.5" chunks
- 1 lb red potato, cut in eights
- half small cabbage, cut in quarters

Directions:
- beef in a pot, water to cover
- add spices, onion, carrot, celery
- bring to boil, reduce to low simmer, cover, 3 hours
- add potato, uncovered, 30 minutes
- add cabbage, cover, 15 minutes
- beef to board, cover in foil, rest for 15 minutes
- slice to plates, add vegetables
- DONE, serve with a good Stout
