Corned Beef

 
Ingredients:
  • 2 lbs Corned Beef
  • corned beef spices
  • 1 onion, quartered
  • 3 carrots, large chunks
  • 3 stalks celery, 1.5" chunks
  • 1 lb red potato, cut in eights
  • half small cabbage, cut in quarters
Directions:
  • beef in a pot, water to cover
  • add spices, onion, carrot, celery
  • bring to boil, reduce to low simmer, cover, 3 hours
  • add potato, uncovered, 30 minutes
  • add cabbage, cover, 15 minutes
  • beef to board, cover in foil, rest for 15 minutes
  • slice to plates, add vegetables
  • DONE, serve with a good Stout
