Ingredients:
- 2 tbls olive oil
- 15 oz chicken breast
- 1/4 cup flour
- 1/4 tsp salt, 1/2 tsp pepper
- 2 tbls olive oil
- 1/4 cup fine minced onion (1.8 oz)
- 3 cloves garlic, minced (0.5 oz)
- 1 mushroom cap, fine chopped (0.5 oz)
- 1 3/4 cups heavy cream
- 1/3 cup grated parmensan cheese
- 1/2 tsp oregano
- 1/3 dry rice per serving -or-
- 2.5 oz dry pasta per serving

Directions:
- heat oven to 375 degrees
- 2 oz oil in hot skillet
- cut breast to 6 2.5oz pieces, drench in flour
- cook 3 minutes, flip over for 3 minutes more
- chicken into a baking dish
- 2 oz oil in hot skillet
- onion, garlic, mushroom to brown
- add cream and cheese and oregano
- cook to thicken, pour over the chicken in the dish
- bake for 15 minutes
- meanwhile, cook the rice and/or pasta
- garish with parsley
