Ingredients:
  • 2 tbls olive oil
  • 15 oz chicken breast
  • 1/4 cup flour
  • 1/4 tsp salt, 1/2 tsp pepper

  • 2 tbls olive oil
  • 1/4 cup fine minced onion (1.8 oz)
  • 3 cloves garlic, minced (0.5 oz)
  • 1 mushroom cap, fine chopped (0.5 oz)
  • 1 3/4 cups heavy cream
  • 1/3 cup grated parmensan cheese
  • 1/2 tsp oregano

  • 1/3 dry rice per serving -or-
  • 2.5 oz dry pasta per serving
Directions:
  • heat oven to 375 degrees
  • 2 oz oil in hot skillet
  • cut breast to 6 2.5oz pieces, drench in flour
  • cook 3 minutes, flip over for 3 minutes more
  • chicken into a baking dish

  • 2 oz oil in hot skillet
  • onion, garlic, mushroom to brown
  • add cream and cheese and oregano
  • cook to thicken, pour over the chicken in the dish
  • bake for 15 minutes

  • meanwhile, cook the rice and/or pasta

  • garish with parsley
