Ingredients:
- 16 oz baby red potato
- 5 slices bacon
- small red onion, small dice
- 1/4 cup white wine vingar
- 2 tbls water
- 3 tbls sugar
- 1 tsp salt. 1/8 tsp black pepper
- 1 tbls parsley

Directions:
- boil potato, 10 minutes, forkable
- cool, cut potato in eights, to bowl
- 10" Skillet, cut bacon in half
- cook bacon to crisp, crumble, to plate
- use the bacon grease to lightly brown onion
- add vinegar, water, sugar, salt and pepper
- boil for 5 minutes, then add potato and parsley
- add half of the bacon, heat through
- serve warm or cold, top with left over bacon
