German Potato Salad



Ingredients:
  • 16 oz baby red potato
  • 5 slices bacon
  • small red onion, small dice
  • 1/4 cup white wine vingar
  • 2 tbls water
  • 3 tbls sugar
  • 1 tsp salt. 1/8 tsp black pepper
  • 1 tbls parsley
Directions:
  • boil potato, 10 minutes, forkable
  • cool, cut potato in eights, to bowl
  • 10" Skillet, cut bacon in half
  • cook bacon to crisp, crumble, to plate
  • use the bacon grease to lightly brown onion
  • add vinegar, water, sugar, salt and pepper
  • boil for 5 minutes, then add potato and parsley
  • add half of the bacon, heat through
  • serve warm or cold, top with left over bacon
