Ingredients:
- 3/4 cup jasmine rice, rinsed
- 1 1/2 cup water
- 2 tbls butter
- 2 tbls olive oil
- 14 oz chicken breast, chopped
- 3 cloves garlic, minced
- 3 eggs, beaten
- 1/2 tsp salt, 1/2 tsp pepper
- 12 oz mixed vegetables, hot
- 3 tbls soy sauce
- 1 1/2 tbls sesame oil
- green onion, sliced

Directions:
- cook rice, refrigerate overnight
- microwave the vegetables, 8 minutes
- meanwhile, oil in hot skillet
- add chicken and garlic, cook 4 minutes
- move chicken to side of skillet
- scramble the eggs with salt and pepper
- add vegetables
- add cold rice, soy sauce, sesame oil
- mix, heat until rice is hot
- Serve, garish with green onion. Enjoy
