- 4 tbls bread crunbs
- 1 large egg
- 1 tsp ea. garlic powder and onion powder
- 1/2 tsp ea. paprika, 1/3 tsp black pepper
- 1/4 tsp salt

- 2 oz butter
- 1 small onion, sliced
- 4 oz brown mushroom caps, sliced
- 2 tbls AP flour
- 1 cup broth (better than bouillon)
- 1 tbls Worcestershire sauce
- 1/2 tsp dried thyme

- 15 oz yellow potato, chucks
- 2 oz butter
- salt and pepper to taste
- cream, sour cream, or milk

- pot of water, boil potato to soft enough, drain
- add butter, salt, pepper, milk etc., mash
- ...
- meanwhile...
- large bowl, beef, crumbs, egg, spices -- mush together
- form 3 balls, flatten to 2/3" fat
- 10" Skillet, hot oil -- pattys for 3 minutes, flip for 3 minutes

- in 8" skillet, heat butter
- add mushrooms and onion, 5 minutes
- add flour, stir constantly, 1 minute
- add broth, Worcestershire sauce, thyme, heat to boil
- reduce to simmer until thick enough, about 5 minutes

- put steak on dish, pour onion/mushroom sauce over steak
