Ingredients:
- 6 oz egg noodles
- 2 oz olive oil
- 14 oz mild italian sausage
- large onion, sliced (8 oz)
- 1.5 cups Bell Peppers, frenched (9 oz)
- 4 cloves garlic, minced
- 1/3 tsp red pepper flakes
- 14.5 oz can diced tomato
- 1/2 cup red wine
- 1/4 tsp each basil, oregano, rosemary
- 1/4 tsp each thyme, black pepper, salt
- grated parmesan cheese

Directions:
- start cooking the noodles
- break up the sausage, brown in oil
- add onion and pepper, cook 5 minutes
- add garlic and pepper flakes, cook 1 minute
- add canned tomato and wine
- add seasoning, simmer for 10 to 15 minutes
- add the drained noodles, toss well
- serve, top with parmesan
