Ingredients:
- 15 oz yellow potato
- butter, salt, pepper, sour cream, milk
- 2 tbls olive oil
- 14 oz boneless pork loin chops
- tbls flour, 1/4 tsp salt, 1/4 tsp pepper
- 3 tbs grated fresh ginger
- 1 egg, beaten
- 3/4 cup bread crumbs
- 2 oz butter
- 4 cloves garlic, minced
- 2 large bell peppers, frenched
- 1 medium onion, sliced
- 2 tbsp tomato paste
- 5 mushrooms, sliced
- 1 cup beef broth
- 1/4 cup red wine
- 1/2 tsp basil, 1/2 tsp oregano
- 1 tbls corn starch, a little water

Directions:
- boil potato, mash with etc.
- flatten pork, coat w/ flour, dip in egg, dip in crumbs
- hold pork until sauce is near ready
- olive oil in hot skillet, cook pork 3 minutes per side
- hot butter and garlic, 1 minute
- add vegetables, cook to limp
- add tomato paste
- add wine and broth
- simmer to thicken, start the pork
- if still watery, add corn starch
- DONE
