Ingredients:
- 3 tbls olive oil
- 9 chicken drumsticks (24 oz)
- 1/2 tsp salt
- 8 oz onion, fine diced
- 4 garlic cloves, minced
- 10 oz carrots, 3/4" chop
- 2 bay leaves
- 1 tsp turmeric, 1/2 tsp cinnamon
- 1/2 tsp ground ginger, 1/2 tsp cumin
- 1/2 tsp curry powder, 1/2 tsp black pepper
- 8 oz green olives, pitted, soak in water for 30 minutes
- 2 tbsl corn starch, a little water
- 2 tsp lemon juice
- parsley for garish
- Italian Bread, virgin olive oil

Directions:
- oil in hot skillet, add chicken
- brown for about 8 minutes, remove to pot
- add onion, cook to translucent
- add garlic and carrot, stir for 4 minutes
- chicken back in, add seasoning
- add 2 1/2 cups water, bring to boil
- cover, reduce to simmer for 15 minutes
- uncover, add olives, simmer 15 minutes more
- add corn starch to thicken, simmer 5 minutes
- add lemon juice
- serve, parsley for garish
- serve with Italian Bread w/ virgin olive oil
