Algerian Olive Chicken Stew

Ingredients:
  • 3 tbls olive oil
  • 9 chicken drumsticks (24 oz)
  • 1/2 tsp salt

  • 8 oz onion, fine diced
  • 4 garlic cloves, minced
  • 10 oz carrots, 3/4" chop
  • 2 bay leaves
  • 1 tsp turmeric, 1/2 tsp cinnamon
  • 1/2 tsp ground ginger, 1/2 tsp cumin
  • 1/2 tsp curry powder, 1/2 tsp black pepper

  • 8 oz green olives, pitted, soak in water for 30 minutes

  • 2 tbsl corn starch, a little water

  • 2 tsp lemon juice

  • parsley for garish
  • Italian Bread, virgin olive oil
Directions:
  • oil in hot skillet, add chicken
  • brown for about 8 minutes, remove to pot

  • add onion, cook to translucent
  • add garlic and carrot, stir for 4 minutes
  • chicken back in, add seasoning
  • add 2 1/2 cups water, bring to boil
  • cover, reduce to simmer for 15 minutes

  • uncover, add olives, simmer 15 minutes more

  • add corn starch to thicken, simmer 5 minutes

  • add lemon juice
  • serve, parsley for garish

  • serve with Italian Bread w/ virgin olive oil
